The best in 'la jeune cuisine' return to New York to celebrate the latest developments in European and American cooking

 

The focus of the first Omnivore festival centered around la jeune cuisine, or young cuisine – specifically the bringing together of young chefs to create new and exciting dishes. Seven years on and this focus still remains at the heart of an event that now takes place annually in New York - bringing together the best in contemporary European and American cooking - as well as in its home town of Deauville, on the northern coast of France.

Phaidon caught up with some of the chefs taking part in the 2010 New York festival in June, including Coco curator René Redzepi, to find out why the event is still pivotal to today’s young chefs, and to hear some of the latest developments in the world of jeune cuisine - including cooking with some fairly unusual ingredients.
