Butter, for greasing
250 g (9oz) (2¾ cups) ground almonds
3 egg whites
500 g (1lb 2oz) (2½ cups) caster sugar
Preheat the oven to 150°C/300°F/Gas Mark 2 and line a baking tray with buttered baking parchment.
Put the almonds in a bowl and mix in the egg whites a little at a time. Stir in the sugar and mix well.
Form the dough into slightly flattened balls and place on the prepared tray.
Bake for 20 – 25 minutes, or until lightly browned.
